Colourful, delicious and, most importantly, fun. Perfect to enjoy with the kids! They taste just like banana pancakes but with all the added goodness of spinach. A delicious and smart way of getting your greens in!
Ingredients
- 40g Purition Banana
- 60g of spinach - 2 handfuls
- 1 tsp baking powder
- 30g of flour - any
- 100ml your preferred milk
- 1 egg
Optional toppings
- A dollop of Greek style yoghurt
- Blueberries
Method
- Add all of the ingredients to a blender and blend for 30 seconds
- Heat 1 tsp of coconut oil, or butter in a frying pan on a medium heat
- Add 2 tbsp of batter to the pan. When bubbles start to appear on the surface, it’s time to flip it!
- Repeat until you've run out of batter. You should be able to make 7–8 medium pancakes
