On the first day of Christmas my true love gave to me, a stack of Purition pancakes and an Orange & Cranberry recipe!
Who doesn't love a good brunch over the Christmas period? These seasonal Orange & Cranberry pancakes are the perfect way to set yourself up for a busy day of festivities!
This recipe requires just 3 simple store cupboard ingredients, alongside your Purition. Not only are they packed with delicious seasonal flavour, but they're high in protein & fibre to keep you satisfied for hours!
Ingredients
- 40g Purition Orange & Cranberry
- 50g of any flour (we used self-raising)
- 1 tsp baking powder
- 150ml milk (we used almond)
Optional toppings
- Orange zest
- Cranberries
- Greek yoghurt
- Maple syrup
Method
- Mix all the ingredients together until smooth. Leave the batter to rest for 5 minutes
- Heat 1 tsp of coconut oil, or butter in a frying pan on a medium heat
- Add 2-3 tbsp of batter to the pan and cook until golden on both sides
- When bubbles start to appear on the surface, it’s time to flip it over!
- Repeat until you've run out of batter. You should be able to make 4–5 medium pancakes
Tips & swaps
- Toppings? We used fresh cranberries, orange zest and a drizzle of maple syrup, but you can use whatever you've got. A dollop of yoghurt with berries is always a winner!
- No Orange & Cranberry? Try it with our Vanilla or Almond & Orange flavours instead
- Gluten-free? Just swap the flour out for your choice of gluten-free flour!
