Simple, spicy and flavourful - would work well with chicken or pork too!

Main ingredients
- Cod or any white fish, 1 large piece or individual fillets
Fresh/ frozen
- Tomato, 1 large sliced
- Garlic, 1 clove
- Cheese, handful for topping
- Parsley, optional

- Cayenne pepper, ¼-½ tsp
- Salt & pepper
What to do
- In a small bowl mix ½ tsp cayenne pepper, ½ tsp ground black pepper and ½ tsp salt. Use this to generously season the fish.
- 2. Slice the tomato, grate the garlic (or use a garlic press) and the cheese.
- Layer the ingredients in an ovenproof dish or pan in this way; Add the seasoned fish first, then the sliced tomato, spread over the garlic and top with cheese.
- Bake in the oven until cooked through. Mine was cooked in just under 20 mins at 180 fan. Garnish with chopped parsley and serve with a side or 2 of your favourite greens.
