Salmon, Spinach & Pea Frittata

Pick up a bag of spinach, some eggs and smoked salmon for this simple and delicious anytime meal...

 

What you'll need

  • Eggs
  • Smoked salmon
  • Spinach
  • Frozen peas
  • Onion
  • Salt & pepper

 

What to do

  1. 1. In a large bowl whisk the eggs, add some salt and pepper. Set aside.
  2. In a frying pan on a medium heat, add a dash of olive oil and some finely chopped onion, cook for 3-4 minutes until soft.
  3. Add the spinach, frozen peas and warm through.
  4. Pour in the eggs. Top with strips of smoked salmon. Leave on the hob to cook through, you can add a lid if you like. Or, start it off on the hob for 2-3 minutes and finish it off in the oven (180 fan), or under the grill, usually takes about 5-8 mins.
  5. Serve with a quick salad - or greens of your choice. I dressed the rest of the spinach with some olive oil and lemon juice and piled it on the top.

Notes & tips

cooking time this will vary depending on the size of your frittata/ how many eggs you used. When the eggs don't wobble anymore, it's a good sign that it's ready! Serve warm or at room temperature with some salad.

onion cheat look out for pre chopped and frozen onion at the supermarket, I find them so useful. Red, white, shallots all come in handy!
