Pick up a bag of spinach, some eggs and smoked salmon for this simple and delicious anytime meal...
What you'll need
- Eggs
- Smoked salmon
- Spinach
- Frozen peas
- Onion
- Salt & pepper
What to do
- 1. In a large bowl whisk the eggs, add some salt and pepper. Set aside.
- In a frying pan on a medium heat, add a dash of olive oil and some finely chopped onion, cook for 3-4 minutes until soft.
- Add the spinach, frozen peas and warm through.
- Pour in the eggs. Top with strips of smoked salmon. Leave on the hob to cook through, you can add a lid if you like. Or, start it off on the hob for 2-3 minutes and finish it off in the oven (180 fan), or under the grill, usually takes about 5-8 mins.
- Serve with a quick salad - or greens of your choice. I dressed the rest of the spinach with some olive oil and lemon juice and piled it on the top.
