If you have time, roast a whole chicken so you can use any leftovers for lunches or another evening meal in the week. Otherwise, cook for however many you're feeding.

- Chicken
For the feta salad
- Feta cheese
- Tomatoes
- Red onion
- Cucumber
- Olives
- Fresh herbs (optional)
- Olive oil
- Red wine vinegar
What to do
- Cook the chicken, whole roasted or pan fried/ grilled chicken breast or thighs.
- While the chicken's resting, prep the salad ingredients. I like to cut everything up into bite size pieces and dress with olive oil and red wine vinegar, but you can just use your favourite dressing. Add some fresh mint and or dill, or a teaspoon of dried oregano to the salad dressing.
- Once the salad's prepped, it's time to plate everything up and enjoy!
