The Daily Feed 🍽

Lamb, Greek Salad & Broccoli

If you've already had burgers this week, swap them out for lamb chops or steaks. 

What you'll need

Enough for however many you're feeding, I cook for 2.

Main ingredients

  • Lamb burgers/ chops/ steaks
  • Feta cheese
  • Fresh tomatoes
  • Red onion

Fresh/ frozen

  • Broccoli or your favourite greens
  • Black olives, optional
  • Fresh dill or mint, optional

Store cupboard: for the dressing

  • Olive oil
  • Red wine vinegar
  • Dried oregano, ½ tsp

What to do

1. Grill or pan fry the lamb to your liking, and while it's cooking and resting, prepare the 'Greek' salad.

2. Cut or crumble the feta cheese into a bowl with some roughly chopped tomatoes, red onion and any extras you may like; could be black olives, cucumber, fresh herbs, pre-cooked broccoli, lettuce... Dress with some olive oil and vinegar, and allow to sit and let these amazing flavours mingle. If you don't have any fresh herbs add ½ tsp oregano or dill to the dressing.

3. Serve up up with a large side of broccoli or your favourite greens!

notes & tips

  • 60-65 degrees this is the temperature at which lamb is cooked, medium. Insert a food thermometer into the thickest part of the meat. If it's between 60-65 degrees, it can come off the heat and left to rest.
  • use your favourite fresh herbs, I used dill but mint or coriander would be lovely too - even a mix of all of them. 
  • 'greek' style salad tonight's side recipe would be lovely with grilled chicken, steak, lamb or pork chops, a piece of grilled or pan fried white fish if you don't have or fancy lamb burgers. 
  • minty yoghurt dip take a couple of spoons of Greek yoghurt and mix in a teaspoon of mint sauce for a cool refreshing accompaniment, if needed. You could also grate in some cucumber if you have it.
