This is really easy 'Woodsman' style chicken. A crowd pleaser with a handful of ingredients and minimal prep. Serve with dressed greens of your choice, or as I will, a big mixed salad with avocado.
What you'll need
Enough for however many you're feeding, I cook for 2.
- Chicken breasts
- Mushrooms
- Smoked bacon
- Grated cheese
- Salt & Pepper
- Olive oil
- Fresh herbs
What to do
- Cut the chicken breasts into 3 pieces. I cut down the 'mini fillet' for one, then with the breast that's left, putting my hand over the top, cut straight down the middle to create another 2 slices.
- Place chicken 'strips' on a baking tray. Add a layer of sliced mushroom, followed by some thinly sliced like 'matchsticks' smoked bacon, and top with some grated cheese (I used up some just out of date halloumi). Drizzle some olive oil and salt & pepper over the top just before putting in the oven to cook.
- Chicken was cooked in about 15 minutes, 180 fan. This meal is super quick to get on the table!
- While chicken is cooking prepare your chosen side dish or dishes . Plate up when everything's ready.
