Brussels Sprouts & Bacon

Make this vegan by swapping the bacon for chestnuts.
What you'll need
Enough for however many you're feeding, I cook for 2.
Fresh ingredients
- Sprouts
- Bacon
Store cupboard
- Olive oil, 1-2 tbsp
- Salt & pepper
What to do
1. Toss the sprouts in some olive oil and salt & pepper, spread them on a baking tray.
2. Finely slice some rashers of bacon (I had a half pack of cubed pancetta that needed using up) and sprinkle on top.
3. Bake for around 35-40 mins at 200 degrees, mix them up half way through for maximum crispiness!
notes & tips
- prep sprouts trim the stalky bottom bit off and remove any yellowy leaves. Cut them in half from top to bottom before tossing in olive oil.
- vegan you can make this recipe vegan by swapping the bacon for roughly chopped roast chestnuts or hazelnuts!
