CARROT CAKE OVERNIGHT OATS

These carrot cake overnight oats are perfect if you need to prepare your Purition the night before. There's no blender required for this wholesome and filling breakfast!
INGREDIENTS
- 30g or 3 very heaped teaspoons Purition Almond
- Half a grated carrot
- Half a grated apple
- 20g sultanas
- 30g rolled oats
- 80ml milk/nut milk
- ½ tsp grated nutmeg
- ½ tsp ground cinnamon
INSTRUCTIONS
- Mix the grated carrot, apple, sultanas, oats and spices in a bowl and set aside.
- Blend the Purition with the milk for 30 seconds.
- Add the Purition mix to the bowl and stir well.
- Decant into a jar, cover and leave in the fridge for a minimum of 3 hours or overnight.
SWAPS & OPTIONAL EXTRAS
- Top with your choice of chopped nuts, Greek or coconut yoghurt, honey, apple slices or whatever you have on hand.
- This recipe works best with Purition Almond, but Vanilla, Pistachio or Almond & Orange work well, too.
