5 RECIPES USING Purition BLUEBERRY
1. Blueberry pancakes
Our go-to pancake recipe is a hit with the new Purition Blueberry!
It requires just 3 simple store cupboard ingredients, you'll probably already, plus 40g of your favourite Purition - obviously we used Purition Blueberry for these, but all Purition flavours work well!
INGREDIENTS
- 40g of Purition Blueberry
- 50g flour
- 150ml milk
- Zest of a lemon (optional)
HOW TO MAKE
- Mix all the ingredients together until smooth. Leave the batter to rest for 5 minutes
- Heat 1 tsp of coconut oil, or butter in a frying pan on a medium heat
- Add a 2-3 tbsp of batter to the pan and cook until golden on both sides
- Repeat until you've run out of batter. You should be able to make 5-6 medium pancakes
- Serve straight away with a dollop of yoghurt, some lemon zest and fresh bloobs!
2. Lemon and Blueberry energy balls
Energy balls, protein balls, bliss balls... whatever you like to call them, there’s no denying that they’re perfect for a mid afternoon pick-me-up or when you just need a little something.
Our energy balls offer a healthier twist to conventional sugary treats, but let's not forget, they owe their sweetness to those naturally sugary dates. While it's the "natural" kind of sugar, it's still sugar, so be mindful of this - especially if weight-loss is your goal.
As the wise folks say, moderation is key!
INGREDIENTS
- 40g of Purition Blueberry
- 1 cup pitted dates
- 1 cup unsalted mixed nuts
- Zest of a lemon (optional)
HOW TO MAKE
- Soak the pitted dates in some 'off the boil' boiled water for 5 mins
- In a food processor, pulse a cup of mixed nuts until roughly chopped
- Drain and to the processor add the dates along with 40-50g Blueberry Purition and the zest of a lemon (if using)
- Pulse until the mixture is combined
- Squidge the mixture together and roll into balls (you can use a tablespoon to help measure)
- Keep in the fridge
3. Purition Blueberry low-carb smoothie
The OG of serving suggestions - always a classic and worth a try!
INGREDIENTS
- 40-50g of Purition Blueberry
- 200-250ml milk
HOW TO MAKE
- Simply blend Purition and milk together for 20 seconds
TIPS & SWAPS
- Serve over ice if you like it chilled, or blend with a handful of extra frozen blueberries
- All milks work, so just use your fave!
4. Purition Blueberry yoghurt bowl
You probably know by now that this is one of our favourite ways of enjoying Purition. It's easy to make, high in protein, good for your gut and so delicious! Plus, is a great option when you don't have a blender at hand.
HOW TO MAKE
Simply stir 40g of Purition into 125g of Greek style yoghurt and top up with your favourite berries or sprinkle some nuts and seeds for extra crunch.
We went for blueberries and a sprinkle of coconut - DE LI CIOUS!
5. Purition Blueberry overnight oats
Summer porridge anyone? This refreshing recipe is perfect if you need to prepare your Purition the night before. No blender required! It’s super easy and tasty, too!
HOW TO MAKE
Mix 40g of Purition with 40g oats and a dash of milk, stir well, cover and leave in the fridge overnight (or at least 4 hours). Give it a good mix and top with a good dollop of yoghurt and your berries of choice. Enjoy!
