This recipe requires just 3 simple store cupboard ingredients, plus 40g of your favourite Purition.
Anto's recipe is perfect not just for Pancake Day, but other special days in between like Birthday breakfasts or weekend brunch...
INGREDIENTS
- 40g Purition Almond & Orange
- 50g any flour
- ½ tsp baking powder
- 200ml your preferred milk
- Optional toppings: A dollop of Greek style yoghurt, orange zest & flaked toasted almonds
INSTRUCTIONS
- Whisk all the ingredients together until smooth. Leave the batter to rest for 10-15 minutes.
- Heat 1 tsp of coconut oil, or butter in a frying pan on a medium heat.
- Add a 2-3 tbsp of batter to the pan and cook until golden on both sides.
- When bubbles start to appear on the surface, it’s time to flip it over!
- Repeat until you've run out of batter. You should be able to make 5–6 medium pancakes.
HOW TO MAKE VIDEO
TIPS & SWAPS
- Toppings? Anto's topped her stack with a dollop of Greek style yoghurt and some grated orange zest, but you can use whatever you fancy - some toasted flaked almonds would be great for flavour and crunch!
- No Almond & Orange? Try it with Purition Vanilla, Almond, Coconut or Banana instead.
- Gluten-free? Swap the flour out for your gluten-free choice, try coconut flour or almond meal?
